Traditional Maíz Beverages in Mexico/Ojeda

A little-known aspect of Mexico's culinary legacy, traditional fermented maize beverages will be the subject of an illustrated lecture by Dr. Cesar Ojeda Linares. His research has documented a previously unrecognized diversity in these beverages, and explored the associated microbial-human interactions as a part of traditional ecological knowledge.
